For the purposes of this blog, I will describe people as normal and as gluten free+.
Normal people are people who can eat anything they want. They feel like going to get a hearty chorizo burrito? They can do that. They want an egg bagel with extra strawberry cream cheese? They can do that too. They want to order a bacon burger without tomatoes? They can do that, but it won’t hurt them if the chef forgets to omit the tomatoes—it just may irritate them or gross them out a little bit. Don’t get me wrong, I do have times when I envy these people. However, these people are not my enemies (though I probably should stop referring to them as “these people”)! I absolutely love educating the normal people about my dietary needs. I love showing them how many options I have, how well I actually eat, and that my life really isn’t that difficult.
Gluten free+ people are gluten free, but may also need to avoid something else. Most of the gluten intolerant people I have met are like this. I, for one, have been gluten free since 2012 (due to a diagnosed intolerance), dairy free since 2017 (due to a process of elimination self-diagnosed intolerance), and potato free since 2018 (due to pain in my stomach every time I eat a potato product because my body thinks I need to avoid just one more thing). I am lucky that none of these things send me into anaphylaxis, but I am sure that many of you out there have a nut, dairy, or food allergy that is life-threatening. We special diet people should stick together! This blog is meant for you. On this site, we are gluten free+ mainly because all of my recipes will be gluten free. However, I hope you feel included in this umbrella description and keep an eye out for symbols and tags to see which recipes work best with your lifestyle.
